Ingredients

Main Ingredients
  • 1 cup sharp cheddar cheese, grated Use a good quality sharp cheddar for best flavor.
  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter, softened Bring to room temperature for easier mixing.
  • 1/4 teaspoon cayenne pepper Optional, for a kick.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 cup cold water Adjust as needed to form dough.
  • as needed sesame seeds for sprinkling Optional for topping.

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the grated cheddar cheese, flour, softened butter, herbs, cayenne pepper, and salt until crumbly.
  3. Gradually add cold water, mixing until a soft dough forms. If the dough feels too dry, add more water, one teaspoon at a time.
  4. Turn the dough onto a floured surface and roll it out to about 1/8 inch thickness.
Cutting & Baking
  1. Use a sharp knife or pastry cutter to slice the dough into strips as thick or thin as you prefer.
  2. Arrange the strips on a baking sheet lined with parchment paper and sprinkle sesame seeds on top if using.
  3. Bake in the oven for about 12-15 minutes or until golden brown, keeping an eye on them to prevent burning.
