Ingredients

Main Ingredients
  • 2 cups cooked chicken (shredded; leftovers work great)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1/2 cup breadcrumbs (plus more for coating)
  • 1/2 cup all-purpose flour (or gluten-free flour)
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons fresh herbs (like parsley or chives; optional)
  • Oil for frying (olive or vegetable oil works)

Method

Preparation
  1. Gather all your ingredients and find a cozy spot in your kitchen.
  2. Shred the cooked chicken into bite-sized pieces.
  3. In a large bowl, mix together the shredded chicken, shredded cheese, breadcrumbs, and flour.
  4. Add the two eggs to the mixture, then fold in garlic powder, onion powder, salt, pepper, and fresh herbs, if using.
  5. Combine everything until it feels cohesive and form small balls or patties.
Cooking
  1. Heat oil in a frying pan over medium heat until shimmering.
  2. Shape fritters using about 2 tablespoons of the mixture each and carefully place them in the pan.
  3. Fry the fritters for approximately 3-4 minutes per side until golden and crispy.
  4. Transfer the fritters to a paper towel-lined plate to absorb excess oil.

Notes

For a twist, add hot sauce or diced jalapeños. You can bake them at 400°F for a healthier version. Leftovers can be stored in an airtight container in the refrigerator and reheated in the oven.
