Ingredients

Main Ingredients
  • 1 pound ground beef (or ground turkey for a lighter option)
  • 1 cup long-grain white rice
  • 1 can (15 oz) diced tomatoes (with juice)
  • 1 can (10.5 oz) cream of mushroom soup (or any cream soup of your choice)
  • 1 cup beef broth (or vegetable broth)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning (optional)
  • 2 cups shredded cheddar cheese (plus more for topping)
  • Salt and pepper to taste

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned, crumbling it as it cooks.
  3. Drain any excess fat from the pan.
  4. Stir in the rice, diced tomatoes, cream of mushroom soup, and beef broth.
  5. Add garlic powder, onion powder, and Italian seasoning, along with salt and pepper; mix everything together until well combined.
  6. Once the mixture is bubbly and starting to simmer (about 5 minutes), turn off the heat and fold in the shredded cheese.
  7. Transfer the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  8. Bake in the preheated oven for about 25-30 minutes, until the cheese is bubbly and golden brown.
  9. Let it sit for about 5 minutes before serving.
