  • 8 oz fresh mushrooms, sliced (cremini or button work well)
  • 1 cup shredded mozzarella cheese (or use your favorite melting cheese)
  • 1 cup heavy cream (or substitute with half-and-half or coconut cream for a lighter option)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon thyme (fresh or dried)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a deep skillet, drizzle olive oil over medium heat.
  3. Add sliced mushrooms and sauté for about 5-7 minutes, or until golden brown and moisture has evaporated.
  4. Stir in minced garlic and thyme, cooking for another minute until garlic is fragrant.
  5. Pour in heavy cream and simmer gently for a few minutes until it thickens slightly.
  6. Season chicken breasts with salt and pepper and place them in a small baking dish.
  7. Pour the creamy mushroom sauce over the chicken, ensuring it's evenly covered.
  8. Sprinkle shredded mozzarella cheese over the top.
Cooking
  1. Bake in the preheated oven for about 25-30 minutes, or until chicken is cooked through and cheese is melty and bubbly.

Notes
