Ingredients
  

For the Filling
  • 4 medium potatoes (baked, or frozen fries) Use leftover baked potatoes or cook frozen fries until crispy.
  • 2 cups shredded cheese (cheddar or your favorite blend) Choose your preferred cheese for flavor.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
For Assembly
  • 4 large flour tortillas Substitute with whole grain or lettuce wraps for a healthier option.
  • Optional toppings: diced jalapeños, sour cream, green onions, or any favorite toppings! Get creative with toppings!

Method
 

Preparation
  1. If using baked potatoes, peel and mash them in a large bowl. If using frozen fries, cook them according to the package instructions until crispy.
  2. Add garlic powder, onion powder, paprika, and season with salt and pepper to the potatoes. Mix well.
Assembly
  1. Warm a tortilla and add a scoop of the potato mixture into the center. Top with shredded cheese.
  2. Fold the sides of the tortilla inward and roll it from the bottom up, keeping the filling snug inside.
  3. Repeat with remaining tortillas and filling.
Cooking
  1. Heat a skillet over medium heat. Place each burrito seam-side down in the pan.
  2. Cook for 2-3 minutes on each side until golden brown and crispy.
