  • 1 medium egg yolk

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixer, beat together the softened butter and sugar until creamy.
  3. Add the egg yolk and vanilla extract, mixing until combined.
  4. Gradually incorporate the flour and salt until the mixture forms a soft dough.
  5. Press the dough directly into a greased tart pan, evenly spreading it across the bottom and up the sides.
  6. Lightly prick the bottom with a fork to avoid air bubbles during baking.
Filling
  1. In a large bowl, mix together the cherries, sugar, cornstarch, lemon juice, and vanilla extract.
  2. Pour the filling over the prepared crust, spreading it evenly.
Baking
  1. Bake the tart for about 30 to 35 minutes until the crust is golden brown and the cherries are bubbling.
  2. Allow it to cool for a little while before slicing.
