Ingredients

Marinade
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons gochujang (Korean chili paste) Adjust for spiciness
  • 2 teaspoons sesame oil
  • 4 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 1 teaspoon black pepper
Main Ingredients
  • 2 pounds boneless, skinless chicken thighs You can also use chicken breasts
  • 2 green onions chopped For garnish
  • Optional: sliced bell peppers, carrots, or any vegetable you love Feel free to experiment with seasonal vegetables

Method

Preparation
  1. In a large bowl, mix the soy sauce, brown sugar, gochujang, sesame oil, minced garlic, grated ginger, and black pepper.
  2. Cut the chicken into bite-sized pieces, then add it to the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes.
Cooking
  1. Heat a large skillet or grill over medium-high heat. Add the marinated chicken, cooking until fully cooked and caramelized on the outside, about 6-8 minutes.
  2. If using vegetables, toss them into the skillet a few minutes before the chicken is done to allow them to soften without losing their crunch.
Serving
  1. Garnish with chopped green onions before serving. Enjoy over steamed rice or with lettuce wraps.

Notes

You can swap chicken for tofu or mushrooms for a vegetarian option. Adding a splash of rice vinegar in the marinade can add a zesty twist.
