Preparation
- Boil water and soak rice noodles according to package directions.
- Drain noodles and toss with a drizzle of oil to prevent sticking.
Cooking
- Heat vegetable oil in a large wok or frying pan over medium-high heat.
- Add garlic and stir-fry for about 30 seconds until fragrant, being careful not to burn it.
- Add chicken strips and cook until golden brown and cooked through, about 5-7 minutes.
- Push the chicken to one side of the pan, pour in the beaten eggs on the other side, and scramble until just set, then mix everything together.
- Add soaked noodles, bean sprouts, and green onions. Pour over Pad Thai sauce, fish sauce, and sugar.
- Toss all ingredients gently until the sauce evenly coats the noodles, about 2-3 minutes.
Serving
- Plate the Chicken Pad Thai and sprinkle with crushed peanuts and cilantro.
- Serve hot with lime wedges on the side.
