Ingredients
  

Main Ingredients
  • 8 oz rice noodles Substitutable with other noodles or zucchini noodles for a low-carb option.
  • 1 lb boneless, skinless chicken breasts, cut into thin strips Alternatives: tofu or shrimp.
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 1 cup bean sprouts
  • 1 cup green onions, sliced
  • 1/4 cup fresh cilantro, chopped for garnish
  • 1/4 cup roasted peanuts, crushed for topping
  • 1 lime, cut into wedges for serving
For the Sauce
  • 1/4 cup Pad Thai sauce Store-bought or homemade.
  • 1 tablespoon fish sauce Or soy sauce for a vegetarian version.
  • 1 tablespoon sugar Brown sugar works wonderfully.

Method
 

Preparation
  1. Boil water and soak rice noodles according to package directions.
  2. Drain noodles and toss with a drizzle of oil to prevent sticking.
Cooking
  1. Heat vegetable oil in a large wok or frying pan over medium-high heat.
  2. Add garlic and stir-fry for about 30 seconds until fragrant, being careful not to burn it.
  3. Add chicken strips and cook until golden brown and cooked through, about 5-7 minutes.
  4. Push the chicken to one side of the pan, pour in the beaten eggs on the other side, and scramble until just set, then mix everything together.
  5. Add soaked noodles, bean sprouts, and green onions. Pour over Pad Thai sauce, fish sauce, and sugar.
  6. Toss all ingredients gently until the sauce evenly coats the noodles, about 2-3 minutes.
Serving
  1. Plate the Chicken Pad Thai and sprinkle with crushed peanuts and cilantro.
  2. Serve hot with lime wedges on the side.

Notes
