  • 2 cups cooked chicken (shredded or cubed; rotisserie chicken works great)
  • 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 can (10.5 oz) cream of chicken soup (or homemade if you prefer)
  • 1 cup chicken broth (low sodium recommended)
  • 1 cup milk
  • 1 teaspoon dried thyme (or your favorite herb)
  • to taste Salt
  • to taste Pepper
  • 1 package refrigerated biscuit dough (or homemade if you've got the time)
  • Optional: fresh parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the cooked chicken, frozen mixed vegetables, cream of chicken soup, chicken broth, milk, thyme, salt, and pepper. Stir until everything is well mixed.
  3. Transfer the mixture into a greased 9×13-inch baking dish.
  4. Open the package of biscuit dough and break it into quarters. Gently place the pieces on top of the chicken filling.
Baking
  1. Bake the casserole in the preheated oven for about 25-30 minutes, or until the biscuits are golden brown and the filling is bubbling.
