Filling Ingredients
  • 2 cups shredded cooked chicken (store-bought rotisserie works great)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder adjust for heat preference
  • 1/4 cup fresh cilantro, chopped (optional)
Tortilla Ingredients
  • 12 pieces corn or flour tortillas
  • Oil for frying (vegetable or canola works best)

Method
 

Preparation
  1. Preheat your oven to 200°F (95°C) to keep taquitos warm.
  2. In a large mixing bowl, combine shredded chicken, cheese, cream cheese, garlic powder, cumin, chili powder, and cilantro. Mix until well integrated.
  3. Warm the tortillas on a skillet for 15-20 seconds per side to make them pliable.
  4. Spoon about 2 tablespoons of the filling onto each tortilla, roll it tightly, and tuck in the sides.
Cooking
  1. In a deep pan, heat about an inch of oil over medium-high heat.
  2. Place rolled taquitos seam-side down in the hot oil and fry until golden brown and crispy, about 2-3 minutes per side.
  3. Drain excess oil on a paper towel-lined plate and keep warm in the oven.
