Preparation
- Preheat your oven to 200°F (95°C) to keep taquitos warm.
- In a large mixing bowl, combine shredded chicken, cheese, cream cheese, garlic powder, cumin, chili powder, and cilantro. Mix until well integrated.
- Warm the tortillas on a skillet for 15-20 seconds per side to make them pliable.
- Spoon about 2 tablespoons of the filling onto each tortilla, roll it tightly, and tuck in the sides.
Cooking
- In a deep pan, heat about an inch of oil over medium-high heat.
- Place rolled taquitos seam-side down in the hot oil and fry until golden brown and crispy, about 2-3 minutes per side.
- Drain excess oil on a paper towel-lined plate and keep warm in the oven.

Serve with guacamole, sour cream, salsa, or a side of Mexican rice and salad. Optionally, add diced jalapeños or experiment with different cheeses.
