  • 12 ounces spaghetti or linguine Can be substituted with whole-grain or gluten-free pasta
  • 2 cups cooked chicken, shredded Rotisserie chicken works beautifully
  • 1 cup mushrooms, sliced Any variety you prefer
  • 1 cup peas Fresh or frozen
  • 1 cup chicken broth Homemade or store-bought
  • 1 cup heavy cream Can swap for half-and-half
  • 1 cup grated Parmesan cheese Plus extra for topping
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped Or 1 teaspoon dried
  • Salt and pepper to taste
  • 1 cup breadcrumbs For that crunchy topping
  • 2 tablespoons butter Optional, for extra richness

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook your spaghetti or linguine according to the package instructions until al dente. Drain and set aside.
  3. In a large skillet, melt a tablespoon of butter over medium heat. Add sliced mushrooms and sauté for about 5 minutes until golden brown.
  4. Stir in the cooked chicken and peas.
  5. Pour in the chicken broth and heavy cream, mixing everything together, and allow to simmer gently for 5-7 minutes.
  6. Sprinkle in the garlic powder, onion powder, fresh parsley, and seasoning.
  7. In a large mixing bowl, combine the cooked pasta with the creamy chicken mixture until thoroughly coated.
  8. Pour the mixture into a greased baking dish. Top with breadcrumbs and a generous sprinkle of Parmesan cheese.
  9. Bake for 25-30 minutes until the top is golden and bubbly.
  10. Let it rest for a few minutes before serving.
