  • 2 pieces boneless, skinless chicken breasts (or thighs) Thighs add extra richness.
  • 1 can black beans, drained and rinsed (15 oz)
  • 1 can corn, drained (optional: fresh corn) Use fresh corn for a summer twist.
  • 1 can diced tomatoes (fire-roasted preferred, 14.5 oz) Fire-roasted adds flavor.
  • 4 cups low sodium chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 piece jalapeño, diced (seeds removed for less heat) Adjust quantity for desired spice.
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 1 piece lime, juiced Juice adds freshness.
  • to taste Fresh cilantro, chopped (for garnish)
  • to taste Tortilla strips or chips (for topping)
  • to taste Optional: Avocado slices, sour cream, or cheese

Method
 

Preparation
  1. Place chicken breasts (or thighs) at the bottom of the slow cooker.
  2. Add drained black beans and corn, followed by diced tomatoes.
  3. Sprinkle the diced onion and minced garlic over the top.
  4. Add diced jalapeño, adjusting amount to your heat preference.
  5. Sprinkle in ground cumin, chili powder, and paprika.
  6. Season with salt and pepper.
  7. Pour in chicken broth, ensuring chicken is well-covered.
  8. Cover slow cooker and set on low for 6-8 hours or high for 3-4 hours.
Finishing Touches
  1. Shred the chicken in the pot using two forks.
  2. Stir everything together and squeeze lime juice in before serving.

Notes
