Preparation
- Heat about half an inch of vegetable oil in a large skillet over medium heat.
- Gently add the triangles of corn tortillas to the oil and fry until golden brown and crisp, about 2-3 minutes.
- Transfer the fried chips to a plate lined with paper towels to drain excess oil.
- In the same skillet, pour in the salsa and bring it to a gentle simmer.
- Let the salsa bubble for a couple of minutes until it thickens.
Assembly
- Add the fried tortilla chips to the salsa and toss gently to ensure they're well coated.
- Transfer saucy chilaquiles to a serving platter or individual bowls.
- Sprinkle cheese over the top, add avocado slices, and swirl with sour cream.
- Garnish with fresh cilantro and optional radishes.
- For an extra touch, fry a couple of eggs sunny-side-up and place them on top.
