Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.25 cups granulated sugar
For the cheesecake layer
  • 16 oz cream cheese, softened
  • 1 cups granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cups chocolate chips (semi-sweet or dark)

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until well blended and resembles wet sand.
  3. Press this mixture firmly into the bottom of a parchment-lined baking pan.
  4. Bake the crust for about 8-10 minutes until lightly golden and fragrant. Let cool while preparing the cheesecake filling.
Cheesecake Filling
  1. In a mixing bowl, beat the softened cream cheese until smooth, eliminating lumps.
  2. Gradually add sugar, mixing until well incorporated.
  3. Stir in the vanilla and add the eggs one by one, mixing just until combined.
  4. Fold in the chocolate chips ensuring they are evenly distributed.
Baking
  1. Pour the cheesecake mixture over the cooled crust and spread it evenly.
  2. Bake for 30-35 minutes, or until the edges are set, but the center still has a slight jiggle.
Cooling
  1. Let the bars cool at room temperature before transferring to the fridge to chill for at least a couple of hours.
