Preparation
- Preheat your oven to 325°F (163°C).
- In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until well blended and resembles wet sand.
- Press this mixture firmly into the bottom of a parchment-lined baking pan.
- Bake the crust for about 8-10 minutes until lightly golden and fragrant. Let cool while preparing the cheesecake filling.
Cheesecake Filling
- In a mixing bowl, beat the softened cream cheese until smooth, eliminating lumps.
- Gradually add sugar, mixing until well incorporated.
- Stir in the vanilla and add the eggs one by one, mixing just until combined.
- Fold in the chocolate chips ensuring they are evenly distributed.
Baking
- Pour the cheesecake mixture over the cooled crust and spread it evenly.
- Bake for 30-35 minutes, or until the edges are set, but the center still has a slight jiggle.
Cooling
- Let the bars cool at room temperature before transferring to the fridge to chill for at least a couple of hours.
