- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine the grated zucchini, vegetable oil, granulated sugar, brown sugar, and vanilla extract. Mix gently until well blended.
- In another bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
- Gradually add the dry mix to the zucchini mixture, stirring until just combined. Avoid overmixing; a few lumps are fine.
- If adding chocolate chips, fold them in gently.
- Spoon the batter evenly into the prepared muffin cups, filling each about three-quarters full.
Baking
- Bake for about 18 to 20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack.
