Ingredients
  

For the churro bites
  • 1 cup water
  • 1/2 cup unsalted butter Can substitute with coconut oil for a different flavor.
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 large eggs Can be substituted with flaxseed meal for a vegan option.
  • Vegetable oil For frying, about 2 inches in the pot.
For the cinnamon-sugar coating
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
For serving
  • Nutella Or your preferred chocolate hazelnut spread.

Method
 

Preparation
  1. In a medium saucepan over medium heat, mix the water and butter until the butter melts completely and the mixture is bubbling gently.
  2. Remove from heat and stir in the flour and salt all at once until the dough pulls away from the sides of the pan and forms a ball, about 1-2 minutes.
  3. Let the dough cool for a few minutes, then add the vanilla extract and incorporate the eggs one by one until the dough is smooth and glossy.
Cooking
  1. Heat about 2 inches of vegetable oil in a deep skillet or pot over medium-high heat.
  2. Test the oil by dropping a small piece of dough in; if it rises to the surface and bubbles, the oil is ready.
  3. Pipe small rings or bite-sized portions of the dough into the hot oil and fry for about 3-4 minutes, turning occasionally until golden brown.
  4. Transfer the cooked churro bites to a paper towel-lined plate to drain excess oil.
  5. While still warm, toss the churro bites in the cinnamon-sugar mixture.
Serving
  1. Arrange the churro bites on a platter with a bowl of Nutella in the center for dipping.

Notes
