Ingredients
  

For the Dough
  • 4 cups all-purpose flour (or bread flour for chewiness)
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • 1 cup warm milk (110°F, can substitute with almond milk)
  • 1/3 cup granulated sugar
  • 1/3 cup unsalted butter, melted (coconut oil works for a vegan option)
  • 1 large egg
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon (for an extra kick, use Saigon cinnamon)
For the Filling
  • 1/2 cup brown sugar, packed
  • 2 tablespoons ground cinnamon
  • 1/3 cup unsalted butter, softened (or vegan butter)
For the Cream Cheese Glaze
  • 4 oz cream cheese, softened (can use dairy-free cream cheese)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons milk (or plant-based milk)

Method
 

Preparation
  1. In a small bowl, combine warm milk and yeast; let it sit for about 5 minutes until bubbly.
  2. In a larger mixing bowl, whisk together the sugar, melted butter, egg, and salt.
  3. Pour in the frothy yeast mixture and gradually add the flour, mixing until it forms a sticky dough.
  4. Transfer the dough to a floured surface and knead for about 5–7 minutes, until it's smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  6. While the dough is rising, mix the brown sugar and cinnamon in a small bowl.
Shaping and Baking
  1. Once the dough has risen, roll it out into a rectangle about 1/4 inch thick, and then spread the softened butter over it.
  2. Top it generously with the cinnamon-sugar mixture, then carefully roll the dough into a log.
  3. Slice into equal pieces (about 12) and place them in a greased baking dish.
  4. Cover your rolls with the towel again and let them rise for another 30 minutes.
  5. Preheat your oven to 350°F while waiting.
  6. Bake for 20-25 minutes, until they're golden brown.
Making the Glaze and Serving
  1. In a mixing bowl, beat together softened cream cheese, powdered sugar, vanilla, and milk until smooth and creamy.
  2. Once the rolls are out of the oven, let them cool for a few minutes before slathering with the glaze.
  3. Serve warm and enjoy!
