  • 2 tablespoons 2 tablespoons granulated sugar
  • 2.25 teaspoons 2 ¼ teaspoons active dry yeast (1 packet)
  • 4 cups 4 cups all-purpose flour
  • 1 teaspoon 1 teaspoon salt
  • 0.5 cups ½ cup baking soda (for boiling) This gives the pretzels their classic flavor and chewy texture.

Coating Ingredients
  • 0.5 cups ½ cup granulated sugar (for coating)
  • 2 teaspoons 2 teaspoons ground cinnamon

Method
 

Preparation
  1. Combine warm water, sugar, and yeast in a large mixing bowl. Stir gently and let it rest for about five minutes until it becomes frothy.
  2. Add in the flour and salt. Mix until a dough starts to form, then knead it on a lightly floured surface for about five minutes until smooth and elastic.
  3. Place the dough in a greased bowl and cover it with a kitchen towel. Let it rise in a warm place for about 30 minutes, or until doubled in size.
  4. In a small bowl, whisk together granulated sugar and cinnamon for the coating.
Cooking
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Bring a large pot of water to a gentle boil and add in the baking soda.
  3. Punch down the risen dough and divide it into eight equal pieces. Roll each piece into a long rope (about 24 inches) and shape it into a pretzel.
  4. Place each pretzel into the boiling water for about 30 seconds before transferring to the lined baking sheet.
  5. Brush the pretzels with the beaten egg and sprinkle with the cinnamon-sugar mixture.
  6. Bake for about 12-15 minutes, or until golden brown.
