Preparation
- Combine warm water, sugar, and yeast in a large mixing bowl. Stir gently and let it rest for about five minutes until it becomes frothy.
- Add in the flour and salt. Mix until a dough starts to form, then knead it on a lightly floured surface for about five minutes until smooth and elastic.
- Place the dough in a greased bowl and cover it with a kitchen towel. Let it rise in a warm place for about 30 minutes, or until doubled in size.
- In a small bowl, whisk together granulated sugar and cinnamon for the coating.
Cooking
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Bring a large pot of water to a gentle boil and add in the baking soda.
- Punch down the risen dough and divide it into eight equal pieces. Roll each piece into a long rope (about 24 inches) and shape it into a pretzel.
- Place each pretzel into the boiling water for about 30 seconds before transferring to the lined baking sheet.
- Brush the pretzels with the beaten egg and sprinkle with the cinnamon-sugar mixture.
- Bake for about 12-15 minutes, or until golden brown.
