Ingredients

Dry Ingredients
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
Wet Ingredients
  • 2 large eggs
  • 1 and 3/4 cups milk (dairy or non-dairy)
  • 1/2 cup vegetable oil or melted butter
  • 1 tablespoon vanilla extract
Optional Add-ins
  • nuts or chocolate chips Optional for extra flavor and texture.
Cinnamon Sugar Topping
  • 1 tablespoon cinnamon Mix with sugar to dust on waffles.
  • 1 tablespoon sugar Mix with cinnamon for topping.

Method

Preparation
  1. Preheat your waffle iron according to its instructions.
  2. In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, salt, and ground cinnamon. Whisk them together until well blended.
  3. In another bowl, beat the eggs, then stir in the milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients, mixing until just combined. It's okay if some lumps remain; avoid overmixing.
Cooking
  1. Lightly grease the preheated waffle iron with oil or cooking spray.
  2. Pour enough batter onto the hot iron to just cover the surface. Close the lid and cook for 3-5 minutes or until golden brown and crisp.
  3. Once cooked, sprinkle the waffles with cinnamon sugar.

Serve waffles with maple syrup, whipped cream, or fresh fruit. You can also prepare the batter in advance and store it in the refrigerator. For a twist, consider vegan options like almond milk and flaxseed.
