  • 4 pieces boneless, skinless chicken breasts Thighs work too for extra tenderness
  • 8 oz mushrooms, sliced Button or cremini mushrooms are fantastic
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced Or use shallots for a sweeter flavor
  • 1 cup chicken broth Homemade or low-sodium store-bought
  • 1/2 cup heavy cream Or use coconut cream for a dairy-free version
  • 1/2 cup dry white wine Like Sauvignon Blanc
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • to taste salt and pepper
  • Fresh thyme or parsley, for garnish Optional, but adds a lovely touch

Method
 

Preparation
  1. Heat a large skillet over medium heat, adding in the olive oil and butter.
  2. Once melted, add the chopped onions and sauté until translucent and fragrant, about 3-4 minutes.
  3. Add the sliced mushrooms to the pan, stirring occasionally until they brown and soften.
  4. Sprinkle salt and pepper over the mushrooms to enhance their flavors.
  5. Push the mushrooms to one side of the skillet and nestle the chicken breasts beside them.
  6. Sear the chicken for about 3-4 minutes on each side until golden.
Cooking
  1. Pour in the chicken broth and white wine, scraping any bits stuck to the pan.
  2. Bring the mixture to a gentle simmer, cover, and cook for about 15 minutes or until the chicken reaches 165°F.
  3. Remove the lid, add the heavy cream, and stir gently to combine.
  4. Let it simmer for a few more minutes until the sauce thickens slightly.
Serving
  1. Garnish with freshly chopped thyme or parsley before serving.
