Ingredients
  

For the crust
  • 1.5 cups all-purpose flour or a gluten-free option
  • 0.5 cup unsweetened shredded coconut
  • 0.5 cup granulated sugar
  • 0.5 cup unsalted butter, melted
  • 1 each egg yolk
  • 1 teaspoon vanilla extract
For the lime layer
  • 1 cup granulated sugar
  • 0.5 cup lime juice (about 4-5 limes)
  • 2 each Zest of limes
  • 4 large eggs
  • 0.25 cup all-purpose flour
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving an overhang for easy removal later.
  2. In a mixing bowl, combine the flour, shredded coconut, sugar, melted butter, egg yolk, and vanilla extract. Mix until the mixture looks crumbly yet holds together when pressed.
  3. Press the mixture firmly into the bottom of the prepared pan. Bake for about 15 minutes or until it’s lightly golden.
Lime Layer
  1. While the crust is cooling, whisk together the granulated sugar, lime juice, lime zest, eggs, flour, and salt in a medium bowl until smooth.
  2. Once the crust is done, pour the lime filling over the warm crust and return it to the oven for another 20-25 minutes. It’s done when the edges are set, but the center has a slight jiggle.
  3. Let it cool completely in the pan for easier slicing.
