Preparation
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving an overhang for easy removal later.
- In a mixing bowl, combine the flour, shredded coconut, sugar, melted butter, egg yolk, and vanilla extract. Mix until the mixture looks crumbly yet holds together when pressed.
- Press the mixture firmly into the bottom of the prepared pan. Bake for about 15 minutes or until it’s lightly golden.
Lime Layer
- While the crust is cooling, whisk together the granulated sugar, lime juice, lime zest, eggs, flour, and salt in a medium bowl until smooth.
- Once the crust is done, pour the lime filling over the warm crust and return it to the oven for another 20-25 minutes. It’s done when the edges are set, but the center has a slight jiggle.
- Let it cool completely in the pan for easier slicing.
