  • 1/2 cup unsalted butter Softened
  • 1/2 cup brown sugar Packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons brewed coffee Cooled

  • 1/2 cup chocolate chips Optional add-in
  • a pinch sea salt For topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Mixing
  1. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy, about 2-3 minutes.
  2. Add in the egg, vanilla extract, and cooled brewed coffee. Mix until smooth.
  3. Gradually incorporate the dry ingredient mixture into the wet ingredients, stirring gently until just combined.
  4. Fold in chocolate chips if using.
Baking
  1. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between them.
  2. Sprinkle a tiny pinch of sea salt on top of each cookie before baking.
  3. Bake for 10-12 minutes, or until the edges are lightly golden.
