Ingredients
  

Cookie Base
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 tablespoons brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
Optional Add-Ins
  • 1 cup chocolate chips or chopped nuts For added texture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, brewed coffee, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, stirring just until combined, being careful not to overmix.
  6. If desired, fold in chocolate chips or nuts at this stage.
Baking
  1. Scoop tablespoons of dough onto a lined baking sheet, leaving space between each cookie.
  2. Bake for about 10-12 minutes, until the edges are lightly golden.
  3. Let the cookies cool slightly; they will firm up a bit after coming out of the oven.
