Ingredients
  

Main Ingredients
  • 6 large large egg whites or 1 ½ cups egg white liquid for convenience
  • ½ cup cottage cheese or Greek yogurt for creaminess
  • ¼ cup shredded cheese like cheddar, gouda, or mozzarella
  • ½ cup spinach fresh or diced, could also use kale
  • ¼ cup bell peppers chopped; feel free to mix colors
  • Salt and pepper to taste
  • Optional spices or herbs like garlic powder, onion powder, or fresh herbs

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. In a blender, combine egg whites and cottage cheese. Blend until smooth.
  3. Stir in shredded cheese, bell peppers, spinach, and season with salt and pepper.
  4. Grease a muffin tin or silicone mold and pour the egg mixture evenly into each mold, filling them about ¾ full.
  5. Place the filled muffin tin inside a larger baking dish and fill the outer dish with hot water to create a steam bath.
Cooking
  1. Bake for about 20 to 25 minutes or until the bites are puffy and a toothpick inserted in the center comes out clean.
  2. Let them sit for a few minutes before carefully removing from the molds.
