  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice Brightens flavor.
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
Crust
  • 1 whole graham cracker crust (store-bought or homemade)
Optional Toppings
  • fresh fruit, chocolate chips, or whipped cream for serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cottage cheese, cream cheese, and sour cream, blending them until smooth.
  3. Add in the sugar, eggs, vanilla extract, and lemon juice. Mix until well incorporated.
Baking
  1. Pour the smooth mixture into the graham cracker crust.
  2. Bake in the oven for around 30-35 minutes, or until the center is set but still has a slight jiggle.
  3. Let it cool down at room temperature for about an hour.
  4. Refrigerate for at least four hours (or overnight if possible) to allow flavors to meld.
