Ingredients
  

Main Ingredients
  • 1 cup cottage cheese can use low-fat or full-fat
  • 6 large eggs
  • 1 cup fresh spinach, chopped or use kale or any leafy green you prefer
  • 1/2 cup bell peppers, diced red or green
  • 1/2 cup shredded cheese cheddar, feta, or your personal favorite
Seasoning

  • to taste pepper
  • optional herbs like chives or parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or olive oil.
  2. In a mixing bowl, whisk together the eggs until completely blended.
  3. Add the cottage cheese to the egg mixture and gently fold it in to create a smooth batter.
  4. Incorporate the chopped spinach and diced bell peppers into the batter and sprinkle in salt and pepper to taste.
  5. If desired, add a dash of paprika or garlic powder for extra flavor.
  6. Pour the batter into the prepared muffin tin, filling each cup about three-quarters full.
Baking
  1. Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  2. Allow the egg bites to cool slightly, then run a knife around the edges to remove them from the tin.

Notes
