  • 1/2 cup shredded cheese (cheddar, mozzarella, or feta) Feel free to use any cheese you prefer.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Non-stick cooking spray or muffin liners To keep things tidy.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs until well combined and frothy.
  3. Add in the cottage cheese and stir gently to combine.
  4. Mix in your chopped vegetables and shredded cheese along with garlic powder, onion powder, salt, and pepper.
  5. Prepare your muffin tin with non-stick cooking spray or muffin liners.
  6. Ladle the egg mixture into each muffin cup, filling about three-quarters full.
Baking
  1. Bake in the oven for about 20-25 minutes, or until the tops are golden brown.
  2. Remove them from the oven and let cool for a few minutes in the tin before transferring to a wire rack.
