Ingredients
  

Wet Ingredients
  • 1 cup cooked quinoa Feel free to substitute with rice if you prefer
  • 1 cup cottage cheese Can use low-fat if desired
  • 2 large eggs Or 1/2 cup unsweetened applesauce for a vegan option
  • 1 tablespoon honey or maple syrup For a touch of sweetness
Dry Ingredients
  • 1/2 cup whole wheat flour Or any flour of choice
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: herbs and spices to taste Like garlic powder, onion powder, or rosemary

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a mixing bowl, combine the cooked quinoa and cottage cheese and stir until well blended.
  3. Add in the eggs (or applesauce) and honey or maple syrup, mixing well until smooth.
Mixing Dry Ingredients
  1. In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, and salt.
  2. Add your favorite herbs to the dry mixture.
  3. Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
Baking
  1. Bake for about 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
