Preparation
- Preheat your oven to 350°F (175°C).
- Drizzle a little olive oil in a skillet over medium heat.
- Add chopped onion and garlic and sauté until fragrant and translucent, about 3-4 minutes.
- Add fresh spinach and sauté until wilted, or heat frozen spinach until warm and any excess moisture is cooked off (about 2 minutes). Set aside to cool slightly.
- In a large mixing bowl, combine cottage cheese, eggs, salt, pepper, and nutmeg. Whisk until smooth and creamy.
- Fold in the sautéed spinach and onion mixture along with the grated cheese.
- Pour the mixture into a greased 9-inch pie dish or similar baking pan.
Cooking
- Bake for about 30-35 minutes or until the quiche is set and the top is lightly golden.
- Allow to cool for a few minutes before slicing into wedges.
