  • 1 cup cottage cheese (low-fat or full-fat for creaminess)
  • 4 large eggs (free-range or organic for best quality)
  • 2 cups fresh spinach (or 1 cup frozen, sautéed and drained)
  • 1 cup grated cheese (cheddar or feta work well)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional, but highly recommended)
  • Olive oil for sautéing Use as needed

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Drizzle a little olive oil in a skillet over medium heat.
  3. Add chopped onion and garlic and sauté until fragrant and translucent, about 3-4 minutes.
  4. Add fresh spinach and sauté until wilted, or heat frozen spinach until warm and any excess moisture is cooked off (about 2 minutes). Set aside to cool slightly.
  5. In a large mixing bowl, combine cottage cheese, eggs, salt, pepper, and nutmeg. Whisk until smooth and creamy.
  6. Fold in the sautéed spinach and onion mixture along with the grated cheese.
  7. Pour the mixture into a greased 9-inch pie dish or similar baking pan.
Cooking
  1. Bake for about 30-35 minutes or until the quiche is set and the top is lightly golden.
  2. Allow to cool for a few minutes before slicing into wedges.
