Ingredients
  

Vegetables
  • 1 medium head cabbage (green or Savoy) Feel free to use other types of cabbage.
  • 1 cup carrots, diced Or use baby carrots for convenience.
  • 1 cup celery, diced
  • 1 onion chopped
  • 3 cloves garlic, minced Be careful not to let it brown.
Broth
  • 6 cups vegetable or chicken broth Homemade or low-sodium store-bought.
  • 1 can (14 oz) diced tomatoes, with juice Adds a lovely tang.
Seasonings
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste Salt and pepper Adjust seasoning as needed.
Cooking Ingredients
  • 2 tablespoons olive oil For sautéing.

Preparation
  1. Chop the cabbage into thick strips and set aside.
Cooking
  1. In a large pot, heat the olive oil over medium heat until shimmering.
  2. Toss in the onion, carrots, and celery, and sauté for about 5-7 minutes until softened.
  3. Stir in the minced garlic and sauté for just 1 minute.
  4. Add the diced tomatoes with their juices and stir well.
  5. Pour in the broth and bring to a gentle boil.
  6. Once boiling, add the cabbage along with oregano, thyme, and a pinch of salt and pepper.
  7. Reduce the heat to a simmer and let the soup cook for about 25-30 minutes, stirring occasionally.
  8. Taste the soup and adjust seasoning as needed before serving.
  9. Ladle into bowls and top with fresh herbs if desired.
