Method
 

Preparation
  1. Heat a tablespoon of olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and stir for another minute.
  4. Add the chicken breasts into the pot with the chicken broth, cumin, chili powder, salt, and pepper.
  5. Bring it to a simmer and let it bubble for 10-15 minutes, or until the chicken is cooked through.
Cooking
  1. Remove the chicken from the pot and shred it with two forks.
  2. Return shredded chicken to the pot along with the black beans, corn, and enchilada sauce.
  3. Stir everything together and cook for another 5 minutes.
  4. Sprinkle in the shredded cheese and stir until melted.
Serving
  1. Serve the soup in bowls and top with sour cream, avocado, cilantro, lime, and tortilla strips.
