- Add the diced onion and minced garlic. Stir until the onion becomes translucent, about 3-4 minutes.
- Add the sliced carrots and diced celery. Sauté for another 5 minutes until softened.
- Add in the zucchini, bell pepper, and green beans. Stir everything together for 3-4 minutes.
- Introduce the diced tomatoes with their juice and vegetable broth, along with the bay leaf and thyme. Stir well.
Cooking
- Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cover and cook for about 15 minutes.
- Once the vegetables are fork-tender but not mushy, season with salt and pepper to taste and discard the bay leaf.
- Ladle the soup into bowls and sprinkle with fresh parsley before serving.
