Ingredients
  

For the Queso
  • 8 oz cream cheese, softened Can be substituted with a vegan alternative.
  • 1 cup shredded cheddar cheese (or Monterey Jack) Use Monterey Jack for a milder flavor.
  • 1 cup cooked and chopped crab meat Canned crab can be used if fresh isn't available.
  • 1 cup cooked shrimp, diced Frozen shrimp can be used if properly thawed.
  • 1/2 cup diced tomatoes, drained Use fresh or canned.
  • 1/4 cup green onions, sliced Reserve some for garnish.
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper Adjust to taste.

  • for serving Tortilla chips or fresh veggies

Method
 

Preparation
  1. In a medium mixing bowl, combine cream cheese and cheddar (or Monterey Jack) and blend until smooth and creamy, about one minute.
  2. Fold in crab and shrimp, followed by diced tomatoes, green onions, garlic powder, and cayenne. Mix gently to keep some seafood pieces intact.
Cooking
  1. Transfer the mixture to a baking dish and bake in a preheated oven at 350°F (175°C) for about 20 minutes, until bubbling and golden on top.
Serving
  1. Remove from the oven, let cool for a minute, garnish with extra green onions, and serve hot with tortilla chips or fresh veggies for dipping.

Notes
