- Preheat the oven to 375°F (190°C).
- Cut a pocket into the side of each chicken breast, being careful not to slice all the way through.
- Stuff each pocket with a spoonful of cranberry sauce and a slice or two of brie.
- Season the outside with salt, pepper, and minced garlic.
- Heat olive oil in a skillet over medium heat, then sear chicken on both sides until golden (about 3 minutes per side).
- Transfer the chicken to a baking dish, spoon extra cranberry sauce on top, and bake for 20–25 minutes or until the chicken reaches 165°F internally.
- Let rest for 5 minutes before serving. Garnish with fresh herbs if desired.
