Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 4 oz brie cheese, sliced
  • 1/2 cup cranberry sauce (homemade or canned)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh thyme or rosemary (optional, for garnish)

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Cut a pocket into the side of each chicken breast, being careful not to slice all the way through.
  3. Stuff each pocket with a spoonful of cranberry sauce and a slice or two of brie.
  4. Season the outside with salt, pepper, and minced garlic.
  5. Heat olive oil in a skillet over medium heat, then sear chicken on both sides until golden (about 3 minutes per side).
  6. Transfer the chicken to a baking dish, spoon extra cranberry sauce on top, and bake for 20–25 minutes or until the chicken reaches 165°F internally.
  7. Let rest for 5 minutes before serving. Garnish with fresh herbs if desired.

Notes
