  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest (about one orange)
  • 0.5 cup orange juice (freshly squeezed if possible)
  • 2 cups fresh or frozen cranberries (if using frozen, thaw and drain them)
For the Glaze
  • 1 cup powdered sugar
  • 2-3 tablespoons orange juice
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease the Bundt pan generously.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In another large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one by one, incorporating each fully before adding the next. Then blend in the vanilla extract, orange zest, and orange juice until just combined.
  5. Gradually mix the flour mixture into the wet ingredients, taking care not to overmix. Gently fold in the cranberries.
  6. Pour the batter into the prepared Bundt pan, smoothing the top with a spatula.
Baking
  1. Bake for about 50-60 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool in the pan for about 10-15 minutes before inverting it onto a wire rack. Let it cool completely.
Glazing
  1. Mix the powdered sugar with 2 tablespoons of orange juice and vanilla extract until smooth.
  2. Drizzle the glaze over the cooled cake, allowing it to cascade down the sides.
