  • 1 pound fresh asparagus (trim the woody ends)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream (or coconut cream for a vegan option)
  • 2 tablespoons butter (or olive oil for vegan)
  • to taste Salt and pepper
  • Zest of 1 lemon for a zing!

Method
 

Preparation
  1. Heat the butter in a large pot over medium heat. Once melted, throw in the chopped onion and sauté until it turns translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute without letting it brown.
  3. Add the chopped asparagus (save a few tips for garnish if desired) and pour in the broth. Bring the mixture to a gentle boil before reducing it to a simmer.
  4. Let the soup simmer for about 15-20 minutes until the asparagus is tender.
  5. Using an immersion blender, puree the soup until smooth. If using a countertop blender, work in batches with caution.
  6. Stir in the heavy cream (or coconut cream) and lemon zest, tasting for seasoning, and adjust with salt and pepper.

Notes
