- Heat olive oil in a large skillet over medium-high heat.
- Add the thinly sliced sirloin to the hot skillet and cook it just until browned, about 3 minutes.
- Remove the beef from the skillet and set it aside.
- In the same pan, toss in diced onions and mushrooms and sauté for about 5 minutes until tender.
- Add minced garlic and paprika, stirring for about a minute.
- Pour in the beef broth, scraping the bottom of the pan to deglaze and bring to a simmer.
- Stir in Worcestershire sauce and Dijon mustard, then return the beef to the skillet.
- Lower the heat to medium-low, and let bubble gently for about 5 minutes.
- Remove from heat and stir in sour cream until fully incorporated.
- Taste and adjust seasoning with salt and pepper before serving.
