  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup mushrooms, sliced (optional) Add for extra flavor and texture.
  • 12 oz cheese tortellini (fresh or frozen) Can use frozen tortellini.
  • 1 cup beef broth
  • 1 cup sour cream (or Greek yogurt for a lighter version) Adjust to taste.
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • 1 tablespoon olive oil For sautéing.
  • Chopped parsley, for garnish (optional) Adds color and freshness.

Method
 

Cooking
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and let it sizzle for about 2-3 minutes until softened.
  3. Toss in the minced garlic and optional sliced mushrooms; stir and cook for another 2-3 minutes.
  4. Add the ground beef, breaking it apart and cooking until browned, about 5-7 minutes.
  5. Season with salt, pepper, Worcestershire sauce, and Dijon mustard.
  6. Pour in the beef broth and stir to combine; let it boil, then reduce to a gentle simmer.
  7. Add the cheese tortellini, cooking for about 3-5 minutes until they float to the surface.
  8. Stir in the sour cream to create a creamy sauce, adjusting seasoning to taste.
  9. If the sauce is too thick, add a splash of water or more broth as needed.

Notes
