  • 1 cup heavy cream Can substitute with half-and-half or coconut cream for a lighter version.
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning Or fresh herbs like thyme or rosemary, if available.
  • to taste Salt and pepper
  • to garnish Fresh parsley or chives Optional for garnish.

Preparation
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
Cooking
  1. Place the chicken breasts in the skillet and cook for about 5-7 minutes on each side until golden and cooked through.
  2. Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F.
  3. Remove the chicken from the skillet and lower the heat.
  4. Pour in the heavy cream and scrape any bits from the bottom of the pan.
  5. Stir in the Boursin cheese until melted and the sauce thickens, adjusting seasoning as needed.
  6. Return the chicken to the pan and allow it to soak in the sauce for a couple of minutes.
  7. Garnish with fresh parsley or chives before serving.
