Ingredients

Pasta
  • 8 oz fettuccine or penne pasta Whole wheat can be used for a healthier option
Chicken
  • 2 cups cooked chicken, shredded or diced Rotisserie chicken works great!
Sauce
  • ½ cup buffalo sauce Adjust to your spice preference
  • 1 cup heavy cream A dairy-free alternative can be used for a lighter version
  • 1 cup grated Parmesan cheese Freshly grated tastes best
  • 2 tablespoons unsalted butter
  • 1 clove garlic, minced Or use ½ teaspoon garlic powder
  • Salt and pepper to taste
Garnish
  • Green onions or parsley Optional but adds a fresh touch

Method

Preparation
  1. Cook the pasta according to the package instructions in a large pot of salted boiling water until al dente.
  2. Meanwhile, melt the butter in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about a minute until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer.
  5. Reduce heat and gradually whisk in the Parmesan cheese until melted into a smooth mixture.
Combining
  1. Stir in the cooked chicken and buffalo sauce into the sauce, then season with salt and pepper to taste.
  2. Once the pasta is ready, drain it and add it to the skillet, tossing to coat the noodles with the sauce.
  3. If the sauce is too thick, add a splash of pasta water to loosen it.
Serving
  1. Plate the pasta and garnish with chopped green onions or a sprinkle of parsley.

Notes

This dish pairs well with a crisp garden salad, warm crusty bread, or a side of celery sticks for crunch. For a vegan option, substitute chicken with sautéed mushrooms or lentils and use a plant-based cream alternative. You can also add vegetables like spinach or roasted bell peppers.
