  • 4 pieces chicken thighs or breasts, skin-on For added flavor
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups apples, peeled and sliced Recommended varieties: Granny Smith
  • 1 cup chicken broth
  • 1 cup heavy cream Can substitute with plant-based cream
  • 1 tablespoon fresh thyme Or 1 teaspoon dried thyme
  • to taste Salt and pepper
  • for garnish to taste Chopped parsley Optional

Method
 

Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces, skin-side down, and sear for about 5-7 minutes until golden.
  3. Flip the chicken and cook for an additional 5 minutes.
  4. Remove chicken and set aside on a plate.
  5. In the same skillet, add diced onion and sauté until soft and translucent, about 4-5 minutes.
  6. Add minced garlic and cook for another minute until fragrant.
  7. Stir in sliced apples and cook for a couple of minutes until they start to soften.
  8. Return the chicken to the skillet and pour in the chicken broth.
  9. Simmer for 10-15 minutes or until chicken is cooked through.
  10. Remove chicken again and stir in heavy cream.
  11. Add thyme, salt, and pepper for flavor.
  12. Return chicken to skillet to soak up flavors for a few more minutes.
  13. Serve garnished with fresh parsley if desired.

Notes
