  • 2 cans whole corn (15 oz each), drained
  • 1 can cream-style corn (15 oz)
  • 1 cup sour cream (or Greek yogurt for a lighter option)
  • 1/2 cup melted butter
  • 1 package corn muffin mix (8.5 oz)
  • 1 cup shredded cheddar cheese (optional topping)
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Combine the two cans of whole corn and the cream-style corn in a mixing bowl.
  3. Stir in the sour cream and melted butter until well blended.
  4. Gently fold in the corn muffin mix and half of the cheese, if using.
  5. Season with salt and pepper to taste.
  6. Transfer the mixture into a greased 9x13 inch baking dish and spread it out evenly.
Baking
  1. Bake in the preheated oven for about 45 minutes, or until the top is golden brown and set.
  2. Sprinkle the remaining cheese on top during the last 10 minutes of baking if desired.
Serving
  1. Let the casserole cool for a few minutes before serving.
  2. Enjoy warm or at room temperature.

Notes
