Ingredients
  

For the Soup
  • 1 lb ground beef (or turkey for a lighter option)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups potatoes, peeled and cubed Use any kind you like
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup carrots, chopped
  • 4 cups beef or vegetable broth
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup heavy cream (or coconut cream for a vegan twist)
  • 1 tablespoon Worcestershire sauce
  • to taste Salt and pepper
  • Fresh parsley for garnish (optional)

Method
 

Cooking
  1. Brown the ground beef in a large pot over medium heat, breaking it apart with a spoon until golden brown.
  2. Add the diced onions and minced garlic, sautéing until fragrant and the onions are translucent, about 3 to 4 minutes.
  3. Add the cubed potatoes, corn, and carrots, stirring them into the mix.
  4. Pour in the broth, followed by the can of diced tomatoes and Worcestershire sauce, and bring to a boil.
  5. Reduce heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender.
  6. Stir in the heavy cream (or coconut cream) and let it simmer for an extra 5 minutes.
  7. Taste and add salt and pepper as needed.
