  • 1 pound ground beef (or turkey for a lighter version)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 4 cups beef broth (or vegetable broth for a vegetarian option)
  • 1 cup heavy cream (or coconut milk for a dairy-free twist)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • Fresh cilantro for garnish (optional)

Method
 

Cooking
  1. Heat a large pot over medium heat and add the ground beef, cooking until browned.
  2. Mix in the chopped onions and sauté until softened.
  3. Add in the garlic, carrots, and potatoes, and sauté for an additional couple of minutes.
  4. Pour in the beef broth, followed by the corn, kidney beans, chili powder, and cumin. Stir well.
  5. Bring to a boil, then lower the heat and let it simmer for about 20 minutes until the vegetables are tender.
  6. Gently mix in the heavy cream, and adjust salt and pepper according to your taste.
