- Heat your olive oil in a large pot over medium heat.
- Once it glimmers, add the chopped onions and sauté until translucent, about 5 minutes.
- Add the minced garlic and stir for another minute, being careful not to let it burn.
- Add the potatoes and asparagus to the pot, coating them in the onion-garlic mixture.
- Add the dried thyme, salt, and pepper, and cook for about 2 minutes.
- Pour in the vegetable broth and bring to a simmer, covering the pot.
- Cook for about 15-20 minutes until the potatoes are fork-tender and the asparagus is bright green.
- Transfer the soup to a blender (or use an immersion blender) and blend until smooth and creamy.
- Return the soup to the pot and stir in the coconut milk and lemon juice. Heat gently for a couple of minutes.
- Taste and adjust seasoning with more salt or pepper as needed, then enjoy!
