Preparation
- Boil a large pot of salted water. Once it’s bubbling, toss in your elbow macaroni and cook until al dente, about 7-9 minutes. Drain and set aside.
- In a medium saucepan, melt the butter over medium heat. Once bubbling, sprinkle in the flour and mix with a whisk to create a roux, cooking for a couple of minutes until smooth.
- Slowly pour in the milk, whisking continuously to prevent lumps. Stir until the mixture starts to thicken, about 5 minutes.
- Stir in the cheddar and Gruyère until melted, then fold in the cream cheese until creamy. Season with salt, pepper, garlic powder, and onion powder.
- Fold the drained pasta into the cheese sauce, coating every noodle.
Optional Topping
- Transfer mac and cheese to a greased baking dish, top with breadcrumbs, and broil for a few minutes until golden.
