Preparation
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat until shimmering.
- Add the chicken and sear each side for about 4-5 minutes until golden brown.
- Remove the chicken from the skillet and place it on a plate.
Making the Sauce
- In the same skillet, add minced garlic and sauté for under a minute until fragrant.
- Pour in the chicken broth, scraping up brown bits from the bottom of the skillet.
- Bring the broth to a gentle simmer, then whisk in heavy cream and parmesan cheese until melted.
- Sprinkle in the Italian seasoning and return the chicken to the pan, spooning sauce over it.
- Cover and let it simmer for about 10 minutes.
Serving
- Let the dish rest before garnishing with chopped parsley and serving.
