- In a large mixing bowl, use an electric mixer to beat the heavy cream until soft peaks form (about 3-5 minutes). Aim for a creamy, billowy consistency.
- In another bowl, combine the softened cream cheese and powdered sugar. Mix until smooth and free of lumps.
- Add the lemon juice, zest, vanilla extract, and a pinch of salt to the cream cheese mixture. Mix until fully combined.
Mixing
- Gently fold the whipped cream into the lemon mixture using a spatula, until no streaks of cream remain.
- Spoon the mousse into individual serving cups or a large bowl.
Chilling
- Refrigerate the mousse for at least an hour to allow flavors to meld and mousse to firm up.

Notes
For a layered presentation, alternate layers of mousse with crushed graham crackers. This mousse can also be infused with fresh herbs or mixed with berries for variation. It tastes better the next day, so consider making it in advance.
