  • 1 pound beef (sirloin or ground)
  • 1 tablespoon olive oil (or butter)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup heavy cream (or a dairy-free alternative)
  • 16 ounces cheese tortellini (fresh or frozen)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Method
 

Cooking
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the diced onion and sauté for about 2-3 minutes until translucent and fragrant.
  3. Toss in the minced garlic and sliced mushrooms and cook until the mushrooms soften, about 5 minutes.
  4. Add the beef (chopped sirloin or crumbled ground beef) and cook until browned and thoroughly cooked.
  5. Pour in the beef broth, Worcestershire sauce, and Dijon mustard, stirring gently.
  6. Let everything come to a simmer and cook for about 5 minutes.
  7. Add the heavy cream, stirring gently until well combined.
  8. Add the tortellini and cook until tender (3-4 minutes for fresh; slightly longer for frozen).
  9. Season with salt and pepper to taste and garnish with chopped parsley.

Notes
