  • 4-6 pieces chicken drumsticks (skin-on for extra flavor)
  • 1 tablespoon olive oil (or your preferred cooking oil)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream (or a non-dairy alternative for a vegan option)
  • 2 tablespoons sweet paprika
  • 1 teaspoon smoked paprika (optional for an extra kick)
  • to taste Salt and pepper
  • to garnish Fresh parsley, chopped
Optional Notes/Substitutions
  • Use vegan drumsticks or tofu, and substitute the heavy cream with coconut cream or a cashew cream. Vegan Version
  • Feel free to add thyme or oregano for extra flavor. Herbs

Method
 

Preparation
  1. Heat a glimmer of olive oil in a large skillet over medium heat.
  2. Add the diced onion and let it soften for about 3-4 minutes.
  3. Stir in the minced garlic and sauté for about 30 seconds until fragrant.
  4. Brown the chicken drumsticks for 3-4 minutes on each side until golden.
  5. Sprinkle in both sweet and smoked paprika, along with salt and pepper. Stir to coat the chicken.
  6. Pour in the chicken broth, bring to a gentle simmer, and let it cook for about 15 minutes.
  7. Reduce the heat to low and stir in the heavy cream. Let it simmer for another 10 minutes until slightly thickened.
